500g caster sugar

For the Premix (produces 850ml, to serve 10)

Preparing the Batch Mix: Pour all the spirits and syrup in a sizeable container, let it rest for 60 minutes, then strain preferably using muslin, to ensure it's fully clarified.

When ready to serve: Pour 85ml from the premix to a mixing glass containing ice, gently stirring gently for one minute to cool it down. Strain into an chilled martini glass or a similar vessel, garnish with the cranberries adding the final touch using a brief mist with the mandarin essence above the glass.
